  • 1 onion medium, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper any color, chopped
  • 1 diced tomatoes 15 oz can, undrained
  • 1 cup chicken broth
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes optional, for a kick
  • ½ cup short-grain pasta like ditalini, small shells, or macaroni
  • ½ cup frozen corn
  • ½ cup frozen peas
  • Salt and black pepper to taste
  • ½ cup shredded cheddar cheese or cheese of choice, for topping

  • 2-3 tablespoons cream cheese for creamy variation

Cooking Steps

  • Heat olive oil in a large skillet, add ground turkey and cook until browned, then drain excess fat.
  • Add onion and bell pepper to the skillet, sauté until softened, then stir in minced garlic and cook until fragrant.
  • Pour in diced tomatoes and chicken broth, then stir in Italian seasoning, smoked paprika, and red pepper flakes; bring to a simmer.
  • Stir in short-grain pasta, frozen corn, and frozen peas, ensuring the pasta is submerged in the liquid.
  • Reduce heat to medium-low, cover, and simmer for 12-15 minutes until pasta is al dente and liquid is absorbed, stirring occasionally.
  • Season with salt and pepper; for a creamy version, stir in cream cheese until melted. Optionally, sprinkle with shredded cheese and melt.
  • Garnish with fresh parsley if desired and serve hot.

Notes

For extra flavor, you can add a splash of white wine with the broth.
