  • 1.5 lbs boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 1 lb small potatoes like creamer potatoes, quartered
  • large head broccoli cut into florets
  • 1 red bell pepper thinly sliced

Sauce

  • 1/2 cup unsalted butter melted
  • 4-5 garlic cloves, minced
  • 1 tablespoon dried Italian seasoning or a mix of dried oregano, thyme, and rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • red pepper flakes Pinch, optional

Garnish

  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Toss the quartered potatoes with half of the melted butter, minced garlic, salt, and pepper in a large bowl. Spread the seasoned potatoes in a single layer on one side of the prepared baking sheet and roast for 15 minutes.

Cooking

  • While potatoes roast, combine chicken, broccoli, and bell pepper with remaining butter, garlic, Italian seasoning, salt, pepper, and red pepper flakes in the same bowl.
  • Remove the baking sheet, add the seasoned chicken and vegetables to the other side in a single layer, then return to the oven.
  • Roast for another 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.

Serving

  • Garnish with fresh parsley, if desired, and serve hot directly from the pan.

This one-pan meal is perfect for a quick weeknight dinner. Adjust the red pepper flakes for desired spice level. Ensure all ingredients are spread in a single layer for even cooking and browning.
