  • 1/2 teaspoon dried red pepper flakes optional, for a little kick
  • Salt and freshly ground black pepper to taste
  • 1 pound asparagus tough ends trimmed, cut into 1-inch pieces
  • 1 pint cherry tomatoes
  • 1 red onion thinly sliced
  • Fresh parsley or dill chopped, for garnish (optional)

  • In a large bowl, combine shrimp, olive oil, minced garlic, lemon juice, oregano, red pepper flakes (if using), salt, and pepper; toss until evenly coated.
  • Add asparagus, cherry tomatoes, and thinly sliced red onion to the shrimp mixture, then toss again to lightly coat the vegetables with oil and seasonings.
  • Spread the shrimp and vegetable mixture in a single layer on the prepared baking sheet, ensuring ingredients are spaced out for roasting.
  • Bake for 12-15 minutes, or until the shrimp are pink and opaque and the vegetables are tender-crisp.
  • Remove from the oven, squeeze fresh lemon wedges over the dinner, and garnish with chopped fresh parsley or dill if desired; serve immediately.

Notes

Adjust the amount of red pepper flakes to your preferred spice level. For best results, avoid overcrowding the baking sheet; use two sheets if necessary to ensure everything roasts evenly.
