  • 1 tablespoon sesame oil (toasted)
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 1 inch piece fresh ginger grated

Sauce Ingredients

  • 0.5 cup low-sodium soy sauce
  • 0.25 cup brown sugar packed
  • 2 tablespoons rice vinegar
  • 1 tablespoon gochujang Korean chili paste, adjust to your spice preference
  • 1 tablespoon sesame oil (toasted)
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon garlic minced
  • 0.5 teaspoon black pepper
  • 2 tablespoons water or beef broth

Cornstarch Slurry

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

  • Cooked white or brown rice

Instructions
 

Preparation

  • Dice the onion, mince the garlic, and grate the ginger to prepare your aromatics.
  • Combine soy sauce, brown sugar, rice vinegar, gochujang, sesame oil, grated ginger, minced garlic, black pepper, and water or broth in a bowl and whisk to create the sauce.

Cooking

  • Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat, then add the ground beef and cook until browned, draining excess grease.
  • Add the diced onion to the beef and cook for 3-4 minutes until softened, then stir in the minced garlic and grated ginger and cook for another minute until fragrant.
  • Pour the whisked sauce mixture over the beef in the skillet and bring to a gentle simmer.
  • In a small bowl, whisk together cornstarch and cold water to form a slurry, then slowly add it to the simmering beef, stirring constantly, until the sauce thickens to your desired consistency (about 1-2 minutes).

Serving

  • Remove the pan from heat and serve the Korean Ground Beef over warm rice, garnished with toasted sesame seeds, sliced green onions, shredded carrots, and a side of kimchi or a fried egg, if desired.

Notes

For a lighter option, use ground turkey instead of ground beef. Adjust gochujang to your preferred spice level. Serve with your favorite toppings like kimchi or a fried egg for added flavor and texture.
