One-Pan Lemon Herb Chicken and Asparagus

  • 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 1.5-inch pieces
  • 1 lb asparagus, trimmed
  • 1 pint cherry tomatoes

Seasoning

  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 1 Zest of lemon large
  • 0.5 Juice of lemon large
  • Salt and freshly ground black pepper to taste

Garnish (optional)

  • Fresh parsley, chopped

Preparation

  • Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the chicken, asparagus, and cherry tomatoes.

Seasoning & Roasting

  • Drizzle with olive oil, then add minced garlic, oregano, thyme, lemon zest, salt, and pepper. Toss until evenly coated.
  • Spread the seasoned chicken and vegetables in a single layer on the prepared baking sheet, ensuring no overcrowding.
  • Roast for 20-25 minutes, or until the chicken is cooked through (165°F / 74°C internal temperature) and the asparagus is tender-crisp.

Finishing Touches

  • Remove from the oven and squeeze the juice of 1/2 lemon over the entire dish.
  • Garnish with fresh chopped parsley, if desired, and serve immediately.

Notes

For extra flavor, marinate the chicken for 30 minutes before roasting. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
