  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 1 ½ cups long-grain white rice
  • 3 cups chicken broth low-sodium is fine
  • 2-3 tablespoons tomato paste
  • 2-3 tablespoons Cajun seasoning or to taste (ensure it's salt-free if using salty broth)
  • 1 teaspoon hot sauce or more to taste (like Tabasco or Crystal)
  • 1 tablespoon olive oil or vegetable oil
  • Fresh parsley or green onions chopped (optional, for garnish)

Cooking Steps

  • Heat oil in a large skillet and sauté onion, bell pepper, and celery for 5-7 minutes until softened.
  • Stir in minced garlic and Cajun seasoning, cooking for one minute until fragrant.
  • Add long-grain rice, stirring to coat, and cook for 2-3 minutes until translucent.
  • Stir in tomato paste, chicken broth, and hot sauce, then bring the mixture to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes, or until most liquid is absorbed.
  • Gently add shrimp to the rice, cover, and cook for another 5-7 minutes until pink and cooked through.
  • Remove from heat, let it rest covered for 5 minutes, then fluff with a fork, garnish, and serve hot.

Notes

Adjust Cajun seasoning and hot sauce to your preferred spice level. For a richer flavor, consider using homemade chicken broth.
