  • 1.5 lbs Boneless, skinless chicken breasts or thighs, cut into 1-inch pieces

Vegetables

  • 3 medium Bell peppers (red, green, yellow, orange), thinly sliced
  • 1 medium Onion, thinly sliced
  • 3 cloves Garlic, minced

Rice & Broth

  • 1.5 cups Uncooked long-grain white rice (rinsed)
  • 2.5 cups Chicken broth (low sodium preferred)

Fajita Seasoning

  • 1 tbsp Chili powder
  • 1 tbsp Cumin
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 0.5 tsp Oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 pinch Cayenne pepper optional, for extra heat

Optional Garnishes

  • 0.25 cup Fresh cilantro, chopped
  • Lime wedges
  • Avocado or guacamole
  • Sour cream or Greek yogurt
  • Shredded cheese

Instructions
 

Preparation

  • Pat chicken dry and cut into even 1-inch pieces. Slice bell peppers and onion, then mince the garlic. Thoroughly rinse the uncooked long-grain white rice under cold water until it runs clear; this prevents sticking and ensures fluffier rice.

Season Chicken

  • In a medium bowl, toss the chicken pieces with half of the prepared fajita seasoning mixture, ensuring they are evenly coated.

Layer Crockpot

  • Spread the rinsed rice evenly in the bottom of your slow cooker. Layer the seasoned chicken over the rice, then scatter the sliced bell peppers, onion, and minced garlic on top. Sprinkle the remaining fajita seasoning over the vegetables, then pour the chicken broth over everything, ensuring the rice is mostly submerged in the liquid.

Cook

  • Cover the slow cooker and cook on HIGH for 2-3 hours or on LOW for 4-5 hours. Continue cooking until the chicken is thoroughly cooked, the rice is tender, and all the liquid has been absorbed. Serve

  • Once cooked, gently stir the mixture to combine all the delicious ingredients; the rice should be fluffy and the chicken tender. Squeeze fresh lime juice over the top just before serving for a bright and zesty flavor.
