Ingredients
  

For the dip

  • 220 grams Approx. 8 oz block of feta cheese, drained from brine
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 1-2 Tbsp honey (plus more, to serve) Adjust sweetness to taste.
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Black pepper (freshly cracked) To taste.
  • Fresh thyme (can use dried, if needed) For garnish.
  • Chopped walnuts (optional; raw or toasted) For garnish, optional.
  • Extra honey drizzle For garnish.
  • Crusty, toasted bread (like sourdough or baguette) For serving.
  • Crackers For serving.

Preparation

  • Start by making the whipped feta. Add the feta cheese and Greek yogurt to a food processor. Blend these ingredients together for a few minutes until smooth, scraping down the sides with a spatula as needed.
  • Next, add the pumpkin puree, 1 or 2 tablespoons of honey, thyme, and a few cracks of black pepper to the food processor. Blend again until all the ingredients are mixed well.
  • Transfer the whipped feta mixture to the fridge to chill for 30 to 60 minutes to help it harden and cool.

Serving

  • When it’s time to serve, put the whipped feta into a large bowl. Garnish it with chopped walnuts (if using), a sprinkle of fresh thyme, an extra drizzle of honey, and more black pepper.
  • Serve with crusty or toasted bread and crackers for dipping. Enjoy!

Notes

If you want a smoother dip, blend a bit longer until it reaches your desired consistency. For a fun twist, try adding a dash of cayenne pepper for a little heat. This dip can be made a day in advance and stored in the fridge.
