  • 1.5 lbs Boneless, Skinless Chicken Breasts or Thighs
  • 2 tablespoons Olive Oil or Vegetable Oil
  • 1 large Onion thinly sliced
  • 2 medium Bell Peppers (any color) thinly sliced
  • 2 cloves Garlic, minced optional
  • Salt and Black Pepper to taste
  • 6-8 slices Provolone Cheese
  • 4-6 Hoagie Rolls or Sub Buns
  • 1 tablespoon Butter for toasting rolls (optional)

Preparation

  • Pat the chicken dry, then thinly slice it into strips or bite-sized pieces and season generously with salt and pepper.

Cooking

  • Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add sliced onions and bell peppers, cooking for 7-10 minutes until softened and slightly caramelized; add minced garlic during the last minute if using, then remove vegetables and set aside.
  • Add the remaining 1 tablespoon of oil to the same skillet and increase heat to high. Cook seasoned chicken in a single layer for 3-5 minutes until cooked through and lightly browned.
  • Return sautéed vegetables to the skillet with the chicken and toss to combine. Divide the mixture into sections, top each with 1-2 slices of provolone cheese, and cover to melt the cheese for 30-60 seconds.

Assembly

  • While cheese melts, lightly butter the insides of hoagie rolls (if desired) and toast them on a separate pan or under a broiler until golden.
  • Carefully scoop the cheesy chicken and vegetable mixture into the toasted hoagie rolls and serve immediately.

Notes

Consider adding a touch of dried oregano, paprika, or a pinch of red pepper flakes with the vegetables for an extra layer of flavor. For a creamier cheesesteak, stir in a tablespoon of softened cream cheese or a splash of heavy cream with the provolone just before covering to melt.
