  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast or thighs cut into 1-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 19 ounces refrigerated cheese tortellini
  • 1/2 cup prepared basil pesto
  • 1/4 cup heavy cream optional
  • 1/4 cup grated Parmesan cheese for garnish
  • Fresh basil for garnish

  • Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through (5-7 minutes). Remove chicken and set aside.
  • Pour chicken broth into the same skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan to deglaze.
  • Add tortellini to the simmering broth and cook according to package directions (usually 3-5 minutes) until tender.
  • Return the cooked chicken to the skillet. Stir in the pesto and heavy cream (if using), and cook for another 1-2 minutes until heated through and the sauce thickens slightly.
  • Remove from heat and garnish with grated Parmesan cheese and fresh basil before serving.

Notes

This recipe is perfect for a quick and satisfying weeknight meal. Feel free to adjust the amount of pesto and cream to your taste. For an extra kick, add a pinch of red pepper flakes with the chicken.
