  • 1.5 lbs white fish fillets (cod, snapper, or halibut)
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 4 anchovy fillets minced
  • 0.5 teaspoon red pepper flakes
  • 1 can crushed tomatoes 28-ounce
  • 0.5 cup Kalamata olives pitted and roughly chopped
  • 2 tablespoons capers rinsed and drained
  • 0.25 cup fresh parsley chopped
  • Salt and freshly ground black pepper to taste

Instructions
 

Prepare Fish

  • Pat the fish fillets dry and season them with salt and pepper.

Start Sauce

  • Heat olive oil in a large skillet, then add minced garlic, anchovies, and red pepper flakes. Cook for 2-3 minutes until fragrant.

Simmer Sauce

  • Pour in crushed tomatoes, bring to a simmer, then stir in olives and capers. Continue to simmer for 5-7 minutes.

Cook Fish

  • Gently place the seasoned fish fillets into the sauce and cover the skillet. Cook for 8-12 minutes until the fish flakes easily.

Finish and Serve

  • Adjust seasoning, garnish with fresh parsley, and serve immediately.

Notes

Avoid overcooking the fish to keep it tender and moist. The anchovies will dissolve into the sauce and provide a savory depth without a strong "fishy" taste.
