Ingredients
  

Chicken

  • 1 pound Boneless, Skinless Chicken Breast cut into bite-sized pieces

Vegetables

  • 1 bag Mediterranean Stir-Fry Vegetable Blend (about 4-5 cups) frozen mix (bell peppers, zucchini, onions, etc.), or 4-5 cups fresh chopped bell peppers, zucchini, and red onion

Sauce & Seasoning

  • 1/2 cup Mediterranean Dressing (herb-forward, with oregano, garlic, lemon notes)
  • 1-2 tablespoons Olive Oil for sautéing
  • Salt to taste
  • Black Pepper to taste

Cooking Instructions

  • Pat the chicken pieces dry with a paper towel, then season them lightly with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat until it shimmers.
  • Add the chicken to the hot pan in a single layer and cook for 3-4 minutes per side until golden brown and cooked through; then remove and set aside.
  • Add a bit more olive oil if needed, then sauté the Mediterranean vegetable blend for 5-7 minutes, stirring occasionally, until tender-crisp.
  • Return the cooked chicken to the pan with the vegetables and pour in the 1/2 cup of Mediterranean dressing.
  • Toss everything together to coat evenly and cook for another 1-2 minutes until the sauce heats through and thickens slightly.
  • Remove from heat and serve immediately, optionally with couscous, quinoa, or warm pita bread.

Notes

For extra flavor, marinate the chicken in a tablespoon of the Mediterranean dressing for 15-30 minutes before cooking. Adjust the amount of dressing to your taste preference.
