  • 1 cup white rice
  • 1 lb peeled and de-veined shrimp
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 minced garlic cloves
  • Pinch red pepper flakes optional
  • 1 juice of lemon
  • 1/4 cup chopped fresh parsley or dill
  • Salt and pepper to taste

  • Cook 1 cup of white rice according to the package directions.
  • While the rice cooks, heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink; then remove and set aside.
  • In the same skillet, add butter, minced garlic, and optional red pepper flakes, sautéing for 1 minute.
  • Stir in the cooked rice, shrimp, lemon juice, and fresh herbs; toss to combine, heat through, and season with salt and pepper.

Notes

For extra flavor, you can add a splash of white wine to the skillet with the garlic. Adjust red pepper flakes to your preferred spice level.
