  • In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Stir in the finely chopped spinach, diced bell peppers, and shredded cheese.
  • Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  • Bake for 15-20 minutes, or until set and lightly golden.
  • Let cool slightly before removing from the muffin tin and serving warm.

Notes

For extra flavor, you can add a pinch of garlic powder or onion powder to the egg mixture. These egg bites are great for meal prepping; store them in an airtight container in the refrigerator for up to 3 days and reheat as needed.
