  • 1.5 lbs boneless, skinless chicken breasts cut into cutlets or pounded thin
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4-5 garlic, minced cloves
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • 2 tbsp fresh parsley, chopped optional, for garnish

  • Pat chicken breasts dry, season with salt and pepper, and slice or pound to an even ¾-inch thickness.
  • Heat olive oil in a large skillet over medium-high heat, then sear chicken for 3-5 minutes per side until golden and cooked through; remove and set aside.
  • Reduce heat to medium, melt butter in the same skillet, and sauté minced garlic for about 1 minute until fragrant.
  • Pour in chicken broth, scraping up browned bits, and simmer for 2-3 minutes.
  • Stir in heavy cream, simmer gently, then gradually add Parmesan cheese until smooth and slightly thickened, seasoning to taste.
  • Return chicken to the skillet, spoon sauce over to coat, simmer for 1-2 minutes to heat through, and serve immediately, garnished with parsley if desired.

Notes

Serve this chicken dish with pasta, rice, or a side of steamed vegetables for a complete meal. Adjust the amount of garlic and Parmesan cheese to your personal preference. For an extra kick, add a pinch of red pepper flakes with the garlic.
