  • 1 lb boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 medium zucchinis chopped into 1/2-inch half-moons
  • 1 red bell pepper deseeded and chopped into 1-inch pieces
  • 2 tbsp olive oil
  • 1 lemon Juice of
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • Salt and black pepper to taste
  • fresh parsley chopped (for garnish, optional)

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C).
  • On a large baking sheet, combine chicken, zucchini, and bell pepper; drizzle with olive oil and lemon juice.
  • Season with oregano, garlic powder, salt, and pepper, then toss until evenly coated.

Baking

  • Spread the seasoned chicken and vegetables in a single layer on the baking sheet.
  • Bake for 20-25 minutes, or until the chicken is cooked through and vegetables are tender-crisp.

Serving

  • Garnish with fresh parsley if desired, and serve immediately.

Notes

This recipe is easily adaptable. Feel free to add other quick-cooking vegetables like cherry tomatoes or thinly sliced onions. For a touch of heat, add a pinch of red pepper flakes with the seasonings.
