  • 2 cups Greek Yogurt plain, full-fat or low-fat
  • 1 cup Blueberries fresh or frozen
  • 2-3 tablespoons Sweetener honey, maple syrup, or sugar, adjusted to taste
  • 1 teaspoon Vanilla Extract
  • Salt optional

Instructions
 

Blueberry Swirl

  • In a small saucepan, combine blueberries and 1 tablespoon sweetener. Cook for 5-7 minutes over medium heat, stirring until blueberries burst and sauce thickens, then let cool.

Yogurt Base

  • In a medium bowl, mix Greek yogurt, remaining sweetener, vanilla extract, and a pinch of salt until smooth.

Assembly

  • Line a baking sheet with parchment paper, then spoon dollops of sweetened yogurt onto it.
  • Spoon small amounts of the cooled blueberry sauce onto each yogurt dollop, then gently swirl with a toothpick for distinct colors.
  • Freeze the baking sheet with the bites for at least 2-3 hours until firm.

Serve and Store

  • Carefully peel the frozen bites from the parchment paper and transfer to an airtight freezer-safe container for storage for up to 2-3 months.

Notes

For varying textures, you can mash some of the blueberries for a smoother sauce while leaving others whole. Adjust the amount of sweetener to your personal preference, and consider adding a sprinkle of granola or chopped nuts for an extra crunch before freezing.
