Romantic Herb-Crusted Salmon with Asparagus

Ingredients
  

For the Salmon:

  • 2 (6 oz) salmon fillets skin on or off
  • 1 tablespoon olive oil
  • 1 tablespoon fresh rosemary finely chopped
  • 1 tablespoon fresh thyme finely chopped
  • 1 clove garlic minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest

For the Asparagus:

  • 1 bunch asparagus about 1 lb, tough ends trimmed
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 lemon cut into wedges (for serving)

Instructions
 

Preheat Oven

  • Preheat your oven to 400°F (200°C).

Prepare Herb Crust

  • In a small bowl, combine olive oil, rosemary, thyme, minced garlic, sea salt, black pepper, and lemon zest. Mix well to form a paste.

Season Salmon

  • Pat salmon fillets dry with paper towels. Spread the herb mixture evenly over the top of each fillet.

Roast Salmon

  • Place salmon fillets on a parchment-lined baking sheet. Roast in the preheated oven for 12-15 minutes until cooked through and flakes easily.

Prepare Asparagus

  • While the salmon roasts, toss trimmed asparagus with olive oil, sea salt, and black pepper on a separate baking sheet or in a large bowl.

Roast Asparagus

  • Add asparagus to the oven during the last 8-10 minutes of salmon's cooking time, or until tender-crisp.

Serve

  • Transfer salmon and asparagus to plates, and serve immediately with lemon wedges for squeezing.

Notes

For extra flavor, you can marinate the salmon in the herb mixture for 30 minutes before roasting. Ensure the asparagus is spread in a single layer on the baking sheet for even cooking.
