Romantic Herb-Crusted Salmon with Asparagus and Lemon-Dill Sauce

  • 2 (6 oz) salmon fillets
  • 1 tbsp olive oil
  • 1 tbsp fresh chopped rosemary
  • 1 tbsp fresh chopped thyme
  • 1 clove garlic minced
  • Salt and freshly ground black pepper to taste
  • 1 bunch fresh asparagus tough ends trimmed
  • 1 tbsp butter
  • 1 lemon half thinly sliced, half for juice
  • 2 tbsp fresh chopped dill
  • 1/4 cup Greek yogurt or sour cream optional, for a richer sauce

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C) and toss trimmed asparagus with 1/2 tbsp olive oil, salt, and pepper on a baking sheet, arranging in a single layer.
  • Combine the remaining 1/2 tbsp olive oil, rosemary, thyme, minced garlic, salt, and pepper in a small bowl. Pat salmon fillets dry and rub the herb mixture evenly over each fillet.

Cooking

  • Place the herb-crusted salmon and asparagus on the same baking sheet, adding lemon slices on top of the salmon. Bake for 12-15 minutes until salmon flakes easily and asparagus is tender-crisp.
  • While baking, melt butter in a small saucepan, squeeze in 1 tbsp lemon juice, and stir in chopped dill. Optionally, whisk in Greek yogurt or sour cream for a creamy consistency, then season with salt and pepper.

Serving

  • Carefully transfer the salmon and asparagus to two plates, then drizzle generously with the lemon-dill sauce. Serve immediately, perhaps with wild rice or a small green salad.

Notes

For extra flavor, marinate the salmon in the herb mixture for 15-20 minutes before baking. Adjust baking time based on the thickness of your salmon fillets. If you prefer a milder garlic flavor, use garlic powder instead of fresh minced garlic.
