Ingredients
  

Mousse

  • 1 cup heavy cream cold
  • 1/2 cup dark chocolate (60-70% cacao) finely chopped
  • 2 tablespoons granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon rosewater or more to taste

Instructions
 

Preparation

  • Melt the chopped dark chocolate in a heatproof bowl set over a saucepan of simmering water, stirring until smooth, then let it cool slightly.
  • In a separate chilled bowl, combine cold heavy cream, granulated sugar, cocoa powder, vanilla extract, rosewater, and a pinch of salt.
  • Beat the cream mixture with an electric mixer on medium-high speed until soft peaks form, being careful not to overbeat.
  • Gently fold one-third of the whipped cream into the cooled melted chocolate to lighten the mixture.
  • Add the chocolate mixture back into the remaining whipped cream and gently fold until just combined.
  • Spoon or pipe the mousse into two serving glasses or ramekins.
  • Refrigerate the mousse for at least 2 hours, or until fully set.
  • Before serving, garnish with fresh raspberries and edible rose petals, if desired.

Notes

Ensure your heavy cream and mixing bowl are very cold to achieve the best whipped cream consistency. For a stronger rose flavor, you can add a tiny bit more rosewater at the end, tasting as you go. Dark chocolate with higher cacao content will result in a richer mousse. Serve immediately after garnishing for the best presentation.
