  • 1 lb ground breakfast sausage mild or spicy
  • 8 oz cream cheese softened
  • 1 can (10 oz) Rotel diced tomatoes with green chilies undrained
  • 2 cups Bisquick baking mix
  • 1 cup shredded sharp cheddar cheese

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the ground sausage, softened cream cheese, and the entire can of undrained Rotel tomatoes and chilies.
  • Add the Bisquick baking mix and shredded cheddar cheese to the bowl.
  • Mix all ingredients thoroughly by hand until well combined and cohesive, ensuring the sausage is evenly distributed.
  • Roll the mixture into 1-inch balls and arrange them on the prepared baking sheet, leaving some space between each.
  • Bake for 20-25 minutes, or until they are golden brown and the sausage is cooked through.
  • Serve the sausage balls warm.

Notes

For extra flavor, you can add a pinch of garlic powder or onion powder to the mixture. If you prefer a spicier kick, use hot ground breakfast sausage and a spicy variety of Rotel. These sausage balls are also great for meal prepping and can be frozen after baking for a quick re-heat later.
