  • 1 pound breakfast sausage crumbled
  • 8 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas 8-inch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  • Cook the crumbled breakfast sausage in a large skillet over medium heat until browned; drain any excess fat.
  • In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  • Pour the egg mixture into the same skillet and scramble until cooked through.

Assembly

  • Warm the tortillas briefly in the microwave or a dry skillet to make them more pliable.
  • Lay out each tortilla and sprinkle with a quarter cup of shredded cheese, then top with a portion of the cooked sausage and scrambled eggs.
  • Fold in the sides of each tortilla, then tightly roll it up from the bottom to create a compact roll-up.

Storage & Reheating

  • Wrap each roll-up individually in plastic wrap and store in the refrigerator for up to 4 days, or freeze for longer storage.
  • Reheat frozen roll-ups in the microwave for 1-2 minutes or in a preheated oven at 350°F (175°C) for 10-15 minutes until warmed through.

Notes

You can customize these roll-ups by adding your favorite vegetables, such as diced bell peppers or spinach, to the egg mixture. For a spicier kick, use hot breakfast sausage or add a pinch of red pepper flakes to the eggs.
