Fritter Ingredients

  • 2 cups cold leftover mashed potatoes
  • 1 large egg beaten
  • 1/4 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 2 tablespoons finely chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

For Frying

  • 2-3 tablespoons cooking oil (olive oil or avocado oil), for frying

Instructions
 

Preparation

  • In a large bowl, combine the cold mashed potatoes, beaten egg, gluten-free flour, fresh chives, fresh parsley, shredded cheddar cheese, garlic powder, salt, and pepper. Mix thoroughly until well combined and firm enough to form patties; add more gluten-free flour a teaspoon at a time if the mixture is too wet.
  • Scoop out about 2 tablespoons of the potato mixture for each fritter and shape them into flat, round patties, approximately 1/2 inch thick and 2-3 inches wide.

Cooking

  • Heat 2-3 tablespoons of cooking oil in a large non-stick skillet over medium heat, then carefully place the potato fritters into the hot skillet, ensuring there is space between them for even cooking.
  • Cook the fritters for 4-5 minutes per side, or until they turn a golden brown color and become crispy.
  • Remove the cooked fritters from the skillet and transfer them to a plate lined with paper towels to absorb any excess oil before serving.

Notes

Ensure mashed potatoes are cold for the best texture and fritter consistency. Adjust the amount of gluten-free flour if the mixture is too wet. Do not overcrowd the skillet while frying to allow for even browning and crispiness.
