Savory Lentil & Mushroom Vegan Meatloaf

This hearty vegan meatloaf, made with lentils and mushrooms, is packed with savory flavors and topped with a sweet and tangy glaze. It's a comforting meal that's perfect for any occasion.

Ingredients
  

For the Loaf:

  • 1 tbsp olive oil
  • 1 medium yellow onion finely diced
  • 2 cloves garlic minced
  • 8 oz cremini mushrooms finely chopped
  • 1 cup cooked brown or green lentils canned, rinsed, and drained is fine
  • 1 ½ cups cooked brown rice
  • ½ cup rolled oats
  • ¼ cup breadcrumbs panko or regular
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp dijon mustard
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ¼ tsp black pepper
  • 1 tbsp ground flaxseed meal for flax egg
  • 3 tbsp warm water for flax egg
  • Salt to taste

For the Glaze:

  • ¼ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce check for vegan brands or extra soy sauce

Instructions
 

Prep the Foundation

  • Preheat oven to 375°F (190°C) and grease a loaf pan; prepare the flax egg and set aside to thicken.

Sauté Aromatics

  • Heat olive oil in a large skillet, cook diced onion until soft, then add minced garlic and chopped mushrooms, cooking until browned.

Combine Loaf Ingredients

  • In a large bowl, combine cooked lentils, rice, oats, breadcrumbs, soy sauce, Dijon, tomato paste, paprika, thyme, pepper, thickened flax egg, and the sautéed aromatics.

Mix and Season

  • Mix thoroughly until the mixture holds together, then taste and adjust seasoning with salt and pepper.

Form the Loaf

  • Press the mixture firmly into the prepared loaf pan, packing it tightly to maintain its shape.

Prepare the Glaze

  • Whisk together ketchup, brown sugar, apple cider vinegar, and vegan Worcestershire sauce (or extra soy sauce) in a small bowl until smooth.

Bake

  • Spread two-thirds of the glaze over the loaf and bake for 45-50 minutes, or until firm and caramelized.

Rest and Serve

  • Remove from oven, let rest in the pan for 10-15 minutes, then carefully remove and slice; serve with remaining glaze.

Notes

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the loaf mixture. This recipe can also be made ahead of time and reheated; simply add a bit more glaze before reheating to keep it moist. Serve with your favorite mashed potatoes or roasted vegetables for a complete meal.
