  • 1 pound lean ground turkey
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1/2 cup chicken or vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups frozen mixed vegetables peas, carrots, corn, green beans

  • Fresh parsley chopped

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, then drain excess grease and set aside.
  • Reduce heat to medium, add chopped onion to the skillet and cook until softened. Stir in minced garlic and cook until fragrant.
  • Stir in diced tomatoes, chicken broth, tomato paste, Italian seasoning, salt, and pepper; bring to a simmer.
  • Return cooked ground turkey to the skillet and add frozen mixed vegetables. Stir everything together.
  • Cover and simmer for 5-7 minutes, or until vegetables are tender-crisp and sauce thickens.
  • Taste and adjust seasoning, then garnish with fresh parsley if desired and serve hot.

Notes

This recipe is highly adaptable. Feel free to substitute other vegetables you have on hand, such as bell peppers, spinach, or zucchini. For a little heat, add a pinch of red pepper flakes with the Italian seasoning. Serve this skillet dinner on its own, or with a side of rice, quinoa, or crusty bread for a more substantial meal.
