Pork Chops

  • 4 boneless pork chops about 1 inch thick

For the Dredging

  • 1/4 cup all-purpose flour plus 1-2 tbsp for roux
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika

For Searing and Gravy

  • 2 tbsp olive oil or vegetable oil
  • 2 tbsp butter
  • large yellow onion finely diced
  • 3 cloves garlic minced
  • 2 cups chicken broth (or beef broth)
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  • Fresh parsley chopped (optional, for garnish)

Instructions
 

Prepare Pork Chops

  • Pat the pork chops dry with paper towels. In a shallow dish, whisk together 1/4 cup flour, salt, black pepper, garlic powder, onion powder, and smoked paprika. Dredge each pork chop in the flour mixture, shaking off any excess.

Sear Pork Chops

  • Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown, then remove and set aside.

Cook Aromatics

  • Reduce heat to medium, add butter to the skillet, then cook diced yellow onion until softened. Add minced garlic and cook for another minute until fragrant.

Make Roux

  • Sprinkle 1-2 tablespoons of remaining seasoned flour over the cooked onions and garlic. Stir well and cook for 1-2 minutes to create a light roux.

Simmer Gravy

  • Gradually whisk in chicken broth, scraping up browned bits, then stir in Worcestershire sauce and thyme. Bring to a gentle simmer, stirring until the gravy thickens (about 5-7 minutes).

Smother Pork Chops

  • Return seared pork chops to the skillet, nestling them into the simmering gravy. Reduce heat to low, cover, and let pork chops smother for 15-20 minutes until tender and cooked through.

Serve

  • Garnish with fresh parsley if desired, and serve hot.

Notes

For extra flavor, consider using homemade chicken broth. Adjust the thickness of the gravy by adding more broth for a thinner consistency or simmering longer for a thicker one.
