  • 1 tbsp olive oil
  • 1 white onion chopped
  • 8 oz cremini mushrooms sliced
  • 5 oz fresh spinach
  • 1 garlic minced
  • 6 large eggs
  • 1/2 cup skim milk
  • 1/4 cup Parmesan cheese grated
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
  • Heat olive oil in a large skillet over medium heat, then sauté the chopped onion for 3-4 minutes until it softens.
  • Add the sliced mushrooms to the skillet and cook for 5-7 minutes, allowing them to release their liquid and brown.
  • Stir in fresh spinach and minced garlic, cooking until the spinach wilts, which takes about 2-3 minutes; then remove from heat.
  • Spread the cooked vegetable mixture evenly into the prepared baking dish.
  • In a large bowl, whisk together eggs, skim milk, Parmesan cheese, dried oregano, salt, and black pepper.
  • Pour the well-combined egg mixture over the vegetables in the baking dish.
  • Bake for 25-30 minutes, or until the center is set and edges are lightly golden.
  • Let the bake stand for 5 minutes before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic. This bake can be prepared the night before and refrigerated, then baked in the morning for a quick breakfast.
