Ingredients
  

Main Ingredients

  • 200 g dried noodles
  • 1 scallions a bunch

Sauce

  • 2 tbsp soy sauce
  • 1 tsp dark soy sauce
  • 0.5 tsp sugar
  • 2 tbsp water

Other

  • 0.5 cup oil
  • salt for cooking noodles

Instructions
 

Cooking the Noodles

  • Cook noodles according to package instructions, adding salt to the water.
  • Drain the cooked noodles and set aside, reserving a bit of the noodle water.

Preparing Scallion Oil

  • Heat oil in a pan over medium heat, then add chopped scallions.
  • Cook until scallions are crispy and fragrant, then remove them from the oil.

Making the Sauce

  • In a bowl, combine soy sauce, dark soy sauce, sugar, and water.
  • Mix well until sugar is dissolved.

Assembling the Dish

  • Pour the scallion oil over the noodles, then add the prepared sauce.
  • Toss everything together until well combined and serve immediately.

Notes

Adjust the amount of dark soy sauce for desired color. For extra flavor, you can drizzle extra scallion oil on top when serving.
