  • 1 pound large shrimp, peeled and deveined, tails on or off
  • 1 large head of broccoli about 1.5 lbs, cut into bite-sized florets
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • On a large rimmed baking sheet, toss the broccoli florets with olive oil, half teaspoon Italian seasoning, quarter teaspoon smoked paprika, and season with salt and pepper.
  • Spread the seasoned broccoli in a single layer on the baking sheet and roast for 10-12 minutes until tender-crisp.
  • While the broccoli roasts, pat the shrimp dry with paper towels.
  • In a medium bowl, combine melted butter, minced garlic, the remaining Italian seasoning, smoked paprika, and a pinch of salt and pepper.
  • Add the shrimp to the butter mixture and toss to coat evenly.
  • Remove the baking sheet from the oven, push the broccoli to one side, and arrange the butter-coated shrimp in a single layer on the other side.
  • Return the baking sheet to the oven and roast for another 8-12 minutes until the shrimp are pink and opaque and the broccoli is tender with crispy edges.
  • Garnish with fresh chopped parsley and a squeeze of fresh lemon juice if desired, then serve immediately.

Notes

For extra flavor, marinate the shrimp for 15-20 minutes before roasting. Ensure the shrimp and broccoli are in a single layer on the baking sheet for even cooking and browning. Do not overcrowd the pan.
