  • 4 Salmon fillets (6 oz each, skin-on or skin-off)
  • 1.5 lbs Baby potatoes (Yukon Golds, red new potatoes, or fingerlings, halved or quartered)
  • 1 bunch Asparagus spears (about 1 lb, woody ends trimmed)
  • 2 tablespoons Olive oil
  • 1 Lemon (for zest and juice)
  • 4 cloves Garlic (minced)
  • 1 teaspoon Dried Italian seasoning
  • 1 teaspoon Salt (or to taste)
  • 0.5 teaspoon Freshly ground black pepper (or to taste)
  • Fresh parsley or dill (Optional garnish)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  • Toss the potatoes with 1 tablespoon of olive oil, half the minced garlic, 0.5 teaspoon salt, and 0.25 teaspoon black pepper on the prepared baking sheet. Spread them in a single layer.
  • Roast the potatoes in the preheated oven for 15-20 minutes until they are slightly tender.
  • While the potatoes roast, toss the trimmed asparagus with the remaining 1 tablespoon olive oil, the rest of the garlic, 1 teaspoon Italian seasoning, 0.5 teaspoon salt, and 0.25 teaspoon black pepper; set aside.
  • Pat the salmon fillets dry and season both sides with a pinch of salt, pepper, and lemon zest.
  • Remove the baking sheet, push the potatoes to one side, add the seasoned asparagus, and place the salmon fillets among the vegetables.
  • Return the sheet pan to the oven and roast for 12-18 minutes, or until the salmon is cooked through and the asparagus is tender-crisp.
  • Squeeze fresh lemon juice over the entire sheet pan before serving, and garnish with fresh herbs if desired.

Notes

Ensure salmon is cooked to an internal temperature of 145°F (63°C) for food safety and optimal doneness. Cooking times may vary depending on the thickness of your salmon fillets and your oven. For crispier potatoes, consider giving them a few extra minutes of roasting time before adding other ingredients.
