  • In a large bowl, combine the cubed potatoes, sliced sausage, chopped onion, and bell peppers.
  • Drizzle olive oil over the mixture, then sprinkle with oregano, paprika, garlic powder, salt, and pepper; toss everything to ensure even coating.
  • Spread the seasoned mixture in a single layer on the prepared baking sheet, avoiding overcrowding to ensure proper roasting.
  • Roast for 25-35 minutes, stirring halfway through, until potatoes are tender and golden brown, and sausage is cooked.
  • Remove from the oven, garnish with fresh parsley if desired, and serve hot.

Notes

For best results, make sure to cut the potatoes and vegetables into similar size pieces for even cooking. You can customize this recipe with your favorite vegetables, such as zucchini or carrots. If using raw sausage, ensure it cooks through completely.
