  • 2 bell peppers (any color), cored and cut into 1-inch strips
  • 1 red onion medium, cut into chunky wedges

Seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

Combine Ingredients

  • In a large bowl, combine the halved baby potatoes, sliced bell peppers, red onion wedges, and sliced sausage.
  • Drizzle with olive oil, then sprinkle in Italian seasoning, garlic powder, salt, and black pepper; toss everything well to coat evenly.

Bake

  • Pour the mixture onto the prepared baking sheet, spreading it in a single layer, using a second sheet if necessary to avoid overcrowding.
  • Bake for 25-30 minutes, then remove, flip or stir the contents for even browning, and return to the oven for another 15-20 minutes.
  • Continue baking until the potatoes are tender and golden brown and the peppers are slightly softened and caramelized.

Serve

  • Remove from the oven, garnish with fresh parsley if desired, and serve immediately.
