  • 2 ripe bananas the riper, the better!
  • 1 cup rolled oats old-fashioned
  • 1 large egg
  • 1 teaspoon baking powder

  • Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it well.
  • Mash the ripe bananas thoroughly in a medium bowl until mostly smooth, leaving a few small lumps if desired.
  • Add rolled oats, egg, and baking powder to the mashed bananas, then stir until just combined, being careful not to overmix.
  • Divide the batter evenly among the prepared muffin cups, filling each approximately two-thirds full.
  • Bake for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  • Cool the muffins in the tin for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For extra flavor, you can add a pinch of cinnamon or a few chocolate chips to the batter.
