Simple Baked Salmon with Zesty Lemon and Dill

Main Ingredients

  • 2 Salmon Fillets (about 6 ounces/170g each), fresh or thawed frozen, skin on or off
  • 1 tbsp Olive Oil (good quality extra virgin)
  • 2 Lemons (one for slices, one for juice)
  • 1 tsp Garlic Powder (or 2 cloves finely minced fresh garlic)
  • 1 tsp Dried Dill (or 1 tbsp fresh dill, chopped)
  • ½ tsp Salt (to taste)
  • ¼ tsp Black Pepper (freshly ground, to taste)

Optional Garnish

  • Fresh parsley or more fresh dill

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly greased foil.
  • Pat the salmon fillets dry with paper towels and place them on the prepared baking sheet.

Cooking

  • Drizzle each fillet with olive oil and season generously with garlic powder, dried dill, salt, and pepper, rubbing the seasoning into the salmon.
  • Slice one lemon into thin rounds and place two to three slices on top of each salmon fillet.
  • Bake for 12-18 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Serving

  • Remove from the oven, squeeze the juice from the remaining lemon over the salmon, and garnish with fresh parsley or dill if desired. Serve immediately.

Notes

For extra flavor, you can marinate the salmon for 15-30 minutes before baking. Adjust cooking time based on the thickness of your salmon. Wild-caught salmon tends to be leaner and may cook faster than farm-raised.
