Main Ingredients

  • 1 lb breakfast sausage bulk or links removed from casings
  • 10 large eggs
  • 1/2 cup milk any kind works
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese cheddar, Monterey Jack, or a blend are great

Optional Additions

  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped onion
  • garlic powder a pinch

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, cook the breakfast sausage over medium-high heat until browned, then drain off any excess grease.

Assembly

  • Whisk eggs, milk, salt, and pepper in a large bowl, and stir in optional bell pepper, onion, and garlic powder if desired.
  • Spread the cooked sausage and half of the shredded cheese evenly in the prepared baking dish.
  • Pour the egg mixture over the sausage and cheese, then sprinkle the remaining shredded cheese on top.

Baking

  • Bake for 30-35 minutes until the center is set and the top is lightly golden brown.
  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For a richer flavor, consider using heavy cream instead of regular milk. The casserole can be assembled the night before, covered, and refrigerated, then baked in the morning for a quick breakfast.
