  • 1 pound large shrimp, peeled and deveined fresh or frozen, thawed
  • ¼ cup soy sauce or tamari for gluten-free
  • 2 tablespoons oyster sauce optional, but adds great depth
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1-2 cloves garlic, minced
  • ½ inch fresh ginger, grated
  • 1 tablespoon cornstarch or arrowroot powder
  • 2 tablespoons water or low-sodium chicken broth
  • 1 tablespoon olive oil or high smoke point oil like avocado or grapeseed
  • 1 head broccoli, cut into small florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned or thinly sliced
  • ½ cup snow peas or snap peas
  • 1 small onion or ½ medium onion, thinly sliced

For Serving & Garnish

Instructions
 

Preparation

  • Whisk together soy sauce, oyster sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a small bowl. In a separate tiny bowl, whisk cornstarch with water or broth until smooth, then add to the main sauce and whisk well.

Cooking

  • Pat the shrimp dry, then heat olive oil in a wok or large skillet over medium-high heat. Add shrimp and cook for 1-2 minutes per side until pink; remove and set aside.
  • Add a splash more oil to the pan, then stir-fry broccoli, carrots, and onion for 3-4 minutes until tender-crisp. Add red bell pepper and snow peas, stir-frying for another 2-3 minutes until bright and tender-crisp.
  • Return the shrimp to the pan with the vegetables, re-whisk the sauce, and pour it over the ingredients. Stir constantly for 1-2 minutes to allow the sauce to thicken and coat everything.

Serving

  • Remove from heat and serve hot over cooked rice or noodles, garnished with sesame seeds and chopped green onions.

Notes

For extra flavor, consider marinating the shrimp in a tablespoon of the sauce for 10-15 minutes before cooking. Adjust the amount of honey or maple syrup to your sweetness preference. This recipe is highly customizable, feel free to substitute vegetables based on what you have on hand, such as snap peas, mushrooms, or baby corn.
