  • 1 pound flank steak thinly sliced against the grain
  • 2 bell peppers (mixed colors), cored and sliced
  • 1 medium yellow onion halved and sliced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • ¼ cup low sodium soy sauce (divided)
  • ½ cup beef broth
  • 1 tablespoon cornstarch (divided)
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons water (divided)
  • 2 tablespoons vegetable oil for stir-frying

Instructions
 

Preparation

  • Slice the flank steak thinly against the grain; combine with 1 tablespoon soy sauce, ½ tablespoon cornstarch, and 1 tablespoon water. Marinate for 15-30 minutes.
  • Whisk together the remaining soy sauce, beef broth, remaining cornstarch, brown sugar, and sesame oil for the sauce.

Cooking

  • Heat 1 tablespoon vegetable oil in a wok over high heat; stir-fry beef in batches for 2-3 minutes until browned, then remove.
  • Add remaining vegetable oil to the wok; stir-fry onions and bell peppers for 3-5 minutes until crisp-tender. Stir in minced garlic and grated ginger for another minute until fragrant.
  • Return beef to the wok; whisk the sauce and pour over the beef and vegetables, stirring for 1-2 minutes until thickened and coated.

Serving

  • Remove from heat and garnish with sesame seeds and chopped green onions if desired.

Notes

For extra flavor, marinate the steak longer, up to 2 hours. Adjust spice level by adding a pinch of red pepper flakes with the garlic and ginger. Serve immediately with steamed rice or noodles.
