Ingredients
  

For the Apple Pie Filling

  • 3 medium-sized apples firm (Granny Smith, Honeycrisp, or Fuji), peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch salt
  • 1 teaspoon lemon juice optional

For the Brownie Batter

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips optional

Instructions
 

Prepare the Apple Pie Filling

  • Peel, core, and dice the apples. Melt 2 tablespoons of butter in a skillet over medium heat, then add the diced apples, brown sugar, cinnamon, nutmeg, and a pinch of salt.
  • Cook, stirring frequently, for 8-10 minutes until the apples are tender-crisp. Optionally, stir in lemon juice before removing from heat and allowing to cool slightly.

Craft the Perfect Brownie Batter

  • Preheat the oven to 350°F (175°C) and lightly grease a 9-10 inch cast iron skillet or 9x9 inch baking dish.
  • Melt 1/2 cup unsalted butter, then whisk in granulated sugar and brown sugar until combined.
  • Beat in eggs one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined, then fold in chocolate chips if desired.

Assemble and Bake

  • Pour half of the brownie batter into the prepared skillet and spread it evenly.
  • Spoon the cooled apple pie filling over the brownie layer, then carefully dollop and gently spread the remaining brownie batter over the apple filling to cover most of it.
  • Bake for 30-35 minutes, or until a toothpick inserted into the brownie portion comes out with moist crumbs.

Serve

  • Allow the brownies to cool slightly in the skillet before serving warm. Enjoy them with vanilla bean ice cream, whipped cream, or a drizzle of caramel sauce.

Notes

For an extra touch, sprinkle a handful of chopped pecans or walnuts over the apple layer before adding the remaining brownie batter. These brownies are best served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
