  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups fresh spinach
  • 1/2 cup chicken broth
  • 1/2 lemon, juiced

Seasoning

  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Cooking Instructions

  • Season the chicken pieces with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat, then add chicken and cook for 3-4 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.
  • Add chopped onion to the skillet and cook for 3-4 minutes until softened, then add minced garlic and cook for another minute until fragrant.
  • Pour in diced tomatoes and chicken broth, then bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  • Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  • Return the cooked chicken to the skillet, then squeeze in fresh lemon juice.
  • Stir everything together gently and heat until the chicken is warmed through.
  • Taste and adjust seasoning if needed. Serve immediately, garnished with fresh parsley and a sprinkle of Parmesan cheese, if desired.

Notes

For extra flavor, marinate the chicken in the spices for 15-20 minutes before cooking. If you don't have fresh spinach, frozen spinach can be used; just be sure to thaw and drain it thoroughly before adding to the skillet.
