  • 1.5 lbs ground beef (85/15 or 90/10)
  • 1 small onion
  • 1 can cream of mushroom soup (10.75 oz)
  • 1 can Rotel diced tomatoes with green chilies (10 oz) undrained
  • 1 can black beans (15 oz) rinsed and drained
  • 1 can whole kernel corn (15 oz) drained
  • 0.5 cup milk (whole, 2%, or skim)
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • Salt and black pepper to taste
  • 1 bag frozen tater tots (32 oz)
  • 1.5 cups shredded cheddar cheese

Cooking Steps

  • Brown the ground beef and chopped onion in a large skillet until the beef is no longer pink and the onion is softened, then drain any excess grease.
  • Transfer the beef mixture to the slow cooker, then add cream of mushroom soup, Rotel, black beans, corn, milk, chili powder, garlic powder, salt, and pepper; stir until combined.
  • Spread the frozen tater tots evenly in a single layer over the beef mixture.
  • Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the tater tots are tender and the casserole is bubbly.
  • About 20-30 minutes before serving, sprinkle cheddar cheese over the tater tots, re-cover, and continue cooking until the cheese is melted.
  • Serve generous portions and enjoy your hearty casserole!

Notes

For extra flavor, consider adding a pinch of smoked paprika to the beef mixture. If you prefer a spicier kick, increase the amount of Rotel or add a dash of cayenne pepper.
