  • 2-3 pounds boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon chipotle powder
  • 1 can diced tomatoes with green chilies (undrained) (10 oz) can

  • Salt and black pepper to taste

Preparation

  • Pat the chicken dry with a paper towel; if using breasts, you can leave them whole or cut them into larger pieces.
  • Place the chicken in the slow cooker and season thoroughly with onion powder, garlic powder, salt, black pepper, and chipotle powder.

Cooking

  • Pour chicken broth over the chicken and add the undrained can of diced tomatoes with green chilies on top.
  • Cook on LOW for 3-4 hours or on HIGH for 2-3 hours until the chicken is easily shredded with two forks.
