  • 12 large eggs
  • 1/2 cup milk dairy or plant-based
  • 1 cup cooked shredded chicken or ground turkey
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup frozen corn thawed
  • 1/2 cup diced bell peppers any color
  • 1/4 cup diced green chilies canned, mild or medium
  • 1/2 cup shredded Monterey Jack or cheddar cheese plus extra for topping

Seasonings & Garnish

  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh cilantro, chopped for garnish, optional
  • Salsa and avocado slices for serving, optional

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.
  • In a large bowl, whisk together eggs and milk, then season with taco seasoning, onion powder, garlic powder, salt, and pepper.
  • Stir in the cooked chicken or turkey, black beans, corn, bell peppers, green chilies, and 1/2 cup shredded cheese until evenly distributed.
  • Pour the mixture into the prepared baking dish and sprinkle with extra shredded cheese if desired.
  • Bake for 30-35 minutes, or until the center is set and edges are golden.
  • Remove from the oven and let rest for 5-10 minutes before slicing and serving.
  • Garnish with fresh chopped cilantro, salsa, and avocado slices if desired.

Notes

This breakfast bake is excellent for meal prepping; you can prepare it on a Sunday and enjoy portions throughout the week. Feel free to customize with other vegetables like spinach or mushrooms, or a different type of cheese based on your preference. For extra spice, add a pinch of cayenne pepper to the egg mixture.
