  • 1 lb boneless, skinless chicken breasts or thighs
  • 1/2 cup buffalo hot sauce
  • 1 tbsp butter optional, for making richer sauce
  • 4 cups mixed greens or cooked rice
  • 1/2 cup diced celery
  • 1/4 cup crumbled blue cheese
  • 1/4 cup ranch dressing
  • 1/2 avocado, sliced
  • Pickled jalapeños optional, to taste

Instructions
 

Cooking Chicken

  • Cook raw chicken until thoroughly done using your preferred method (boil, bake, or sauté), then shred it with two forks or a stand mixer.
  • Combine the shredded chicken with buffalo sauce in a bowl, optionally mixing in melted butter for a richer flavor, and gently warm on the stovetop.

Assembling Bowls

  • Place 1 cup of mixed greens or cooked rice into each of four serving bowls to create your base.
  • Spoon a generous amount of the warm buffalo chicken onto the greens or rice in each bowl.
  • Top each bowl with diced celery, crumbled blue cheese, and avocado slices.
  • Drizzle with ranch dressing and add pickled jalapeños if desired, then serve immediately and enjoy.

Notes

For extra convenience, use pre-cooked rotisserie chicken. Adjust the amount of buffalo sauce to your spice preference, and add more or less blue cheese and ranch dressing to taste. These bowls are great for meal prep; just keep the warm chicken separate from the greens and assemble right before eating.
