  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color works!)
  • 2 tablespoons tomato paste
  • 1-2 tablespoons Cajun seasoning adjust to your spice preference
  • 1/4 cup chicken broth or water
  • Salt and black pepper to taste
  • 4-6 hamburger buns, brioche buns, or slider rolls

  • Heat olive oil in a skillet over medium-high heat and cook ground chicken for 3-4 minutes until browned; drain excess fat.
  • Add onion and bell pepper to the skillet, sautéing for 2-3 minutes until they begin to soften.
  • Stir in tomato paste and Cajun seasoning, cooking for 1 minute to toast spices and deepen flavor.
  • Pour in chicken broth, simmer for 2-3 minutes until the sauce thickens, and season with salt and pepper.
  • Toast buns if desired, then spoon the Cajun chicken mixture onto them and serve immediately.

Notes

For an extra kick, add a pinch of cayenne pepper with the Cajun seasoning. You can also add a splash of Worcestershire sauce for a deeper umami flavor to the sloppy joe mixture.
