  • Halve the cherry tomatoes, rinse the spinach if fresh, and mince the garlic.
  • Heat olive oil in a non-stick skillet over medium heat, then sauté minced garlic and red pepper flakes for 30 seconds until fragrant.
  • Add halved tomatoes and cook for 2-3 minutes until soft, then add spinach and cook until wilted (1-2 minutes).
  • Create a few small wells among the vegetables in the pan, then crack an egg into each well.
  • Season the eggs and vegetables with salt and black pepper.
  • Cover the skillet and cook for 3-5 minutes, depending on desired yolk firmness.
  • Remove the lid and sprinkle the crumbled feta cheese evenly over the eggs and vegetables.
  • Gently slide the feta eggs onto plates and serve immediately while warm.

Notes

For extra flavor, you can add a squeeze of lemon juice or a sprinkle of fresh herbs like basil or oregano before serving. Using feta from a block and crumbling it yourself will provide a richer flavor and better texture than pre-crumbled feta. Keep an eye on the garlic while sautéing to prevent burning, which can lead to a bitter taste.
