  • 1 can canned tuna in olive oil (5 oz), drained
  • 1 ripe avocado halved and pitted
  • 2 tablespoons sugar-free mayonnaise
  • 1 tablespoon finely chopped red onion (optional)
  • 1 tablespoon chopped fresh cilantro or parsley
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

  • 1/4 cup shredded cheddar cheese (for topping, optional)
  • Paprika for garnish (optional)

  • In a medium bowl, combine the drained tuna, sugar-free mayonnaise, red onion (if using), cilantro or parsley, garlic powder, salt, and pepper; mix well until combined.
  • Scoop out a small amount of avocado flesh from each half to create a well, being careful not to break the skin.
  • Divide the tuna mixture evenly between the two avocado halves, mounding it slightly.
  • Optionally, sprinkle shredded cheddar cheese over the tuna mixture in each avocado boat.
  • If using cheese, broil for 1-2 minutes until melted and bubbly, or enjoy as is for a no-cook option.
  • Garnish with paprika if desired and serve immediately.

Notes

For extra flavor, you can add a squeeze of fresh lime juice to the tuna mixture. Make sure your avocado is ripe for the best texture and flavor. These boats are best enjoyed fresh.
