  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes peeled and diced into 1-inch cubes
  • 1 red onion roughly chopped

Seasoning & Dressing

  • 2 tbsp olive oil
  • 1 lemon half thinly sliced, half juiced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • Salt and freshly ground black pepper to taste

Garnish (optional)

  • Fresh parsley chopped for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • Combine diced sweet potatoes and chopped red onion in a large bowl, then drizzle with 1 tablespoon of olive oil, salt, and pepper, tossing to coat evenly. Spread them onto a large baking sheet.
  • In the same bowl, season the chicken breasts with the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper, ensuring they are well coated.

Cooking

  • Place the seasoned chicken breasts and lemon slices on the same baking sheet with the vegetables, ensuring even spacing.
  • Bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender; broil for 2-3 minutes at the end for extra browning, if desired.

Serving

  • Remove from the oven, let the chicken rest for a few minutes before slicing.
  • Serve immediately, optionally garnished with fresh chopped parsley.

Notes

For best results, ensure the chicken and vegetables are in a single layer on the baking sheet to promote even cooking and browning.
