  • 1 package fresh tortellini cheese-filled recommended
  • 1 tbsp olive oil or butter
  • 8 oz cremini mushrooms sliced
  • 2 cloves garlic minced
  • ½ cup chicken or vegetable broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese plus more for serving
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped (for garnish, optional)

  • Bring a large pot of salted water to a boil, then cook the tortellini according to package directions and drain, reserving ½ cup of pasta water.
  • While the tortellini cooks, heat olive oil in a skillet, then sauté the sliced mushrooms until browned and fragrant after adding minced garlic.
  • Pour in broth and simmer, scraping up browned bits, then stir in heavy cream and Parmesan cheese to create the sauce.
  • Add drained tortellini to the skillet, toss to coat, and add reserved pasta water if needed to reach desired sauce consistency, then season with salt and pepper.
  • Serve immediately, garnished with fresh parsley and extra Parmesan.

Notes

If you don't have fresh tortellini, frozen will also work, but adjust cooking time according to package instructions. A splash of white wine can be added with the broth for extra flavor.
