Main Ingredients

  • 2 eggs
  • 1 tablespoon milk or water
  • Salt and pepper to taste
  • 2 slices bread
  • 1/4 avocado, mashed, OR cream cheese, OR nut butter Choose one
  • Tiny bit butter or oil for the pan

Optional Topping

  • Shredded cheese or chives for topping

Instructions
 

Scrambled Eggs

  • Crack the eggs into a bowl, add milk or water, and season with salt and pepper. Whisk well until combined.
  • Pop the bread into the toaster.
  • Heat a non-stick pan with a tiny bit of butter or oil over medium heat. Pour in the whisked eggs and gently scramble with a spatula for 2-3 minutes until just set.

Toast Preparation and Serving

  • While the eggs are cooking, spread your choice of avocado, cream cheese, or nut butter on the toasted bread.
  • Optionally, top the scrambled eggs with cheese or chives. Serve immediately with the prepared toast.

Notes

Adjust seasoning to your preference. For extra creaminess, use milk; for a lighter texture, use water. Be careful not to overcook the eggs; they should be soft and moist.
