Speedy Shrimp Scampi with Zucchini Noodles

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb large shrimp peeled and deveined
  • 2 cloves garlic minced
  • 1/4 tsp red pepper flakes optional
  • 1/4 cup dry white wine or chicken broth
  • 1 tbsp fresh lemon juice
  • 2 medium zucchini spiralized into noodles (or 16 oz pre-packaged zucchini noodles)
  • 1/4 cup fresh parsley chopped
  • Salt to taste
  • black pepper to taste

Instructions
 

  • Heat olive oil in a large skillet or pan over medium-high heat.
  • Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and opaque; then remove and set aside.
  • Add minced garlic and red pepper flakes (if using) to the same skillet and sauté for 30 seconds until fragrant.
  • Pour in white wine or chicken broth and lemon juice, then bring to a simmer and cook for 1-2 minutes until slightly reduced, scraping up any browned bits.
  • Add the zucchini noodles to the skillet and toss with the sauce for 1-2 minutes, until just tender-crisp.
  • Return the cooked shrimp to the pan and toss gently to combine and heat through.
  • Stir in fresh parsley and season with salt and black pepper to taste.
  • Serve immediately.

Notes

This quick and healthy dish is perfect for a weeknight meal. Adjust red pepper flakes to your preferred spice level.
